School is out, what lovely way to kick off summer holidays. Kids are off, let's face it, they eat a lot more when they are off. When I think of waffles, I think of my sister. We were taught how to make waffles by my mum, I was 10 years old, with no cookbooks or measuring equipments. My mum taught us how to make sure the recipe was always well balanced. A good amount of butter is needed to keep it moist, enough eggs, sucre vanillé (vanilla sugar), milk, baking powder and very important to add une pincée de sel ( a pinch of salt). Through time we adjusted the recipe as we saw fit. To substitute the vanilla sugar, sugar and vanilla extract can be used. When there is enough butter, normally there is no need to grease the waffle iron maker, I do the same when it comes to pancakes.
In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
Scoop a ladleful of batter into the centre of each grid; spread and cover. Close lid and cook 6-8 minutes or until until golden and crisp. Repeat to cook remaining waffles. Serve immediately. Bon appétit.
